Every ranking on Gyuto Club rests on two numbers: what steel a blade is made from, and how hard that steel is. Get those, and you can predict most of how a knife behaves — how keen an edge it takes, how long it holds it, how easily it comes back, and whether it rusts if you leave it wet. This is the page that turns a spec table from jargon into predictions you can make yourself.

What HRC actually measures

HRC is the Rockwell C hardnessof the steel. The test presses a diamond cone into the metal under a set load and measures how far it sinks — the less it penetrates, the harder the steel, and the higher the HRC number. It’s a standardized, internationally defined measurement, which is exactly why it’s the one figure worth insisting a maker publish. Kitchen knives run from about 55 HRC (soft German steel) to 64 HRC(very hard Japanese steel). That range sounds small; in practice it’s the difference between a blade you can sharpen in five minutes on any stone and one that holds a razor edge for months but chips if you look at it wrong.

The trade-off that governs everything

Here is the single idea to take away: hardness buys edge retention and keenness, and pays for it in toughness. A harder edge can be ground thinner and more acute without folding over, so it cuts keener and stays sharp longer. But hard steel is also more brittle— where a soft edge rolls and can be honed straight again, a hard edge chips and the metal is simply gone. So a 62 HRC gyuto rewards careful use and a whetstone, while a 56 HRC German knife shrugs off abuse and a honing rod but needs sharpening more often. Neither is “better”; they’re tuned for different owners.

Stainless vs carbon

The other axis is corrosion resistance. Stainlesssteels contain enough chromium to strongly resist rust — VG10, VG-MAX, AUS-10 and the German X50CrMoV15 are all stainless, and they’re the low-maintenance choice for a real kitchen. Carbonsteels — the Japanese White #2 (Shirogami) and Blue #2 (Aogami) — contain little chromium. They take an even keener edge and sharpen beautifully, but they’ll spot with rust within minutes of contact with a wet onion and develop a gray patina over time. Carbon is a genuine pleasure to sharpen and use, but only if you’ll wipe the blade dry after every cut. For most people, stainless is the answer.

How to use this when you shop

Insist on two things in a listing: a named steel and a stated hardness. A knife that says “VG10, 60 HRC” is a knife whose maker is willing to be measured; one that says only “high carbon stainless” is hiding the fact that it has nothing specific to claim. That single filter removes most of the mystery-steel junk. From there, match the steel to how you cook: stainless around 58–61 HRC for a keen, low-fuss daily knife; softer German steel if you want maximum toughness and easy upkeep; carbon or powder steel only if you’re an enthusiast who’ll maintain it. No. The Damascus pattern is layered cladding wrapped around a separate hard cutting core — it's decorative and adds slight corrosion resistance, but the core steel (VG10, SG2, etc.) is what cuts. A plain-clad knife with the same core performs the same as a Damascus one; you're paying for looks, not performance.
