Short version: the 15XV is the best-executed machine of a type this site is skeptical of, and it is worth understanding exactly what it sells you. It is not primarily a sharpener. It is an edge converter— a jig that regrinds a Western knife from a 20° bevel to a 15° one and then keeps it there. If that is what you want, nothing else at this price does it as cleanly. If you already own Japanese knives ground at 15°, you are buying a fast, consistent maintenance machine and paying for a conversion you do not need. And if you are still undecided about learning a whetstone, this is the purchase that decides it for you, because a knife run through this machine has a machine-set geometry from then on.
What “Trizor XV” actually means
Two names, one machine. 15XV is the model number, Trizor XV is the name of the edge shape, and EdgeSelect is the name of the stage-selection system. Listings mix all three, which is why the same sharpener appears to have four different names across retailers.
The geometry argument behind it comes straight from EdgeCraft, and it is the same argument this site makes on every knife page. Western knives, the company writes, are “sharpened with sturdy 20 degree facets (40 degree total angle),” while Asian knives use “the more delicate 15 degree facets (30 degree total angle).” A thinner included angle wedges less material apart, so it cuts with less force — the whole reason a gyuto feels different from a German chef’s knife, as our Japanese vs German comparison works through in detail.
Where EdgeCraft goes further is the claim that its version of a 15° edge is better than a factory one: the machine, it says, creates “the 15 degree edge with a multi-bevel gothic arch geometry which provides more metal support for the edge, therefore making it more durable.” That is the maker’s claim, not a measured result, and we have no way to verify it. What is not in dispute is the mechanism — a multi-bevel edge does put more steel immediately behind the apex than a single flat bevel, and thin edges fail at the apex first.
The three stages, and what each is for
Most electric sharpeners have one or two stages. This one has three, and the third is the reason it lands at the top of our electric sharpeners roundup rather than the middle.
Stage 1shapes the edge with 100% diamond abrasives — this is the stage that does the 20°-to-15° conversion, and the one that removes the most metal. Stage 2 refines and sharpens with a finer diamond abrasive. Stage 3 polishes using what EdgeCraft calls patented stropping disks, which is the same job a leather strop does at the end of a hand session: it removes the burr and refines the apex without cutting a new bevel. Coarse to fine to polish is exactly the progression a stone user follows across three grits, described in our grit guide — the machine simply performs it in fixed increments instead of letting you choose them.
The practical consequence is the most useful thing in the manual, and almost nobody reads it: after the first sharpening, “you should be able to re-sharpen to a razor sharp edge 3 or more times using only Stage 3.” Stage 3 barely abrades. A user who touches up in Stage 3 and only returns to Stages 1 and 2 when the knife is genuinely dull will take a small fraction of the metal off that a user who runs all three stages every time does. Same machine, radically different outcomes for the knife.
The first sharpening is the expensive one
Here is the figure that should decide your purchase, and it is EdgeCraft’s own: on a first sharpening of a European or American knife, “it may take up to 20 pair of pulls to fully re-angle the edge of a thin blade.” Twenty passes per side against a diamond wheel is not a touch-up. It is a reprofiling job — the machine is grinding a new, narrower bevel down the entire length of the edge, and all of that removed steel comes off your knife permanently.
That is not a defect; it is what the conversion physically requires, and a stone user reprofiling 20° to 15° by hand would remove a comparable amount of metal over a much longer session. The point is that it happens once per knife, and you should know it is happening. A Wüsthof Classic put through this machine is no longer a 20° knife and cannot casually be returned to one.
The contrast with a knife that is already Japanese is stark. On a contemporary Asian blade, the manual says “only a few (1-2) pairs of alternating pulls… will be needed to develop a burr.” One or two pairs against twenty. If your drawer is already Japanese, this machine is barely working — which is the gentlest way to own it, and also the case where its headline feature earns you nothing.
What it will not do
The manual’s stated exclusions are short and worth repeating: do not sharpen ceramic knives, do not sharpen scissors, and do not insert ax blades “or any blade that does not fit freely.” Serrated knives are supported, but only in Stage 3, with “five (5) to ten (10) pairs of alternating pulls” — putting a bread knife through Stages 1 or 2 would level the scallops. One exclusion the manual does not spell out, and that we will: keep single-bevel Japanese knives out of it. A yanagiba, usuba or deba is ground asymmetrically — EdgeCraft’s own knife-styles page describes a primary bevel “ground, commonly at about 10-11 degrees” under a small cutting facet of about 15°, with a flat or hollowed back face that must stay flat. A slotted machine that abrades both faces on alternating pulls has no way to respect that. EdgeCraft itself directs single-bevel owners to a different model built for the job. Two more practical limits. The machine is a US 120 V appliance rated at 125 W on its nameplate, so it is not a travel or export purchase. And it is a fixed-abrasive design: the wheels are rigid and the blade is dragged past them, which is repeatable but unforgiving of an unusual blade profile. A belt machine flexes to follow a curve; this one imposes its own.

The 15XV sits at one end of a spectrum. The honest way to place it is against the two alternatives people actually weigh against it.

Against a whetstone, the trade is steel for skill, and it is not close on either axis. A stone costs a fraction as much, removes almost nothing, and gives a better final edge — but only after you have learned to hold an angle, which is a genuine barrier plenty of people never clear. The clamp lets you pick any angle from 15° to 30° and takes very little metal; it also takes fifteen minutes a knife and never gets faster. The 15XV takes about a minute and gives you no angle choice at all. Who should buy it
Buy the 15XV if you own Western knives, you want the thinner Japanese edge without buying Japanese knives, and you have accepted that you are not going to learn a stone. It is also a defensible buy for a busy household kitchen where several people use the knives and nobody will maintain them properly — a machine that anyone can operate in a minute genuinely beats a stone that sits in a drawer. It sits at the premium end of the electric-sharpener market, and within that market the extra polishing stage is worth the difference over two-stage machines.
Do not buy it if your knives are already Japanese — you are paying for a conversion that does not apply, and a combination whetstone will maintain a gyuto better for a fraction of the outlay. Do not buy it if your drawer is mixed and you want to keep it that way, because a single fixed jig cannot serve two geometries. Do not buy it for a knife with real sentimental or resale value, because the first sharpening is irreversible. And do not buy it expecting to service a bread knife properly, a pair of scissors at all, or anything ceramic.
