Knife Anatomy

The vocabulary every spec sheet assumes you already have — and an honest note on which parts change how a knife cuts and which are just words.

Knife spec sheets are written by people who already know the words, which makes them hard to read for anybody who does not. This page is the vocabulary, in the order you meet it on an actual knife — and, more usefully, an honest note at the end about which of these parts change how a knife cuts and which are merely things that have names.

The blade

Tip. The front point. It does the detail work: piercing, scoring, coring, starting a cut in the middle of something. A fine tip is more useful and more fragile; a nakiri has effectively none at all, which is the single fact that defines it.

Edge.The sharpened line along the bottom. It is not uniform: on a Western chef’s knife it curves upward toward the tip and runs flat near the handle. That shape is called the profile, and it decides how you cut.

Belly.The curved section of the edge. A pronounced belly is what allows rock-chopping — tip planted on the board, handle pivoting. Flatter knives such as santokus and nakiris have little or none, and they are built for push-cutting instead. Trying to rock a flat knife is the most common reason people dislike a santoku.

Heel. The rear corner of the edge, nearest the handle. It is the strongest part of the blade and the part you use for anything that needs force: squash skin, a stubborn carrot, chicken cartilage.

Spine.The unsharpened top of the blade. Its thickness at the heel is one of the better rough indicators of how a knife will cut — thin spines generally mean thin grinds. A well-finished knife has the spine edges eased; a cheaply finished one leaves them square, which is uncomfortable when you rest your index finger there.

Bevel. The ground face immediately behind the edge, and the part you are actually sharpening. A Western knife is ground on both sides (double bevel); traditional Japanese knives such as the yanagiba are ground on one side only (single bevel), which cuts beautifully in one direction and is handed. The junction

Choil.Where the sharpened edge stops, just before the handle. Sometimes a notch, sometimes just a rounded corner. It is where your index finger sits if you choke up on the blade, and a sharp unrounded choil is genuinely unpleasant — a common complaint about budget Japanese knives, and a two-minute fix with fine sandpaper.

Bolster.The thickened collar of steel between blade and handle on a forged knife. It adds mass at the balance point, stops your hand sliding forward, and is the most consequential piece of knife anatomy that most people never think about — because a full bolster running down to the heel keeps the last inch of edge off a flat sharpening stone. Sharpen such a knife for a few years and you develop a blunt hooked section by the handle. Japanese knives generally have no bolster; some Western makers use a half-bolster specifically to avoid the problem.

Ricasso. The short flat unsharpened section of blade between the choil and the handle, common on knives without a bolster. Functionally it does the same job of giving your finger somewhere safe to sit.

The handle

Tang. The blade steel that continues back into the handle. A full tangruns the full length and width, usually visible as a strip between the two handle scales with rivets through it — it adds weight toward the hand and is very difficult to break. A partial or rat-tail tangis a narrow stub; lighter, cheaper, and the place a cheap knife fails. Japanese wa-handles are typically fitted onto a hidden tapered tang, which is not a defect — it is a different and much lighter construction.

Scales. The two pieces of handle material fixed either side of a full tang. Pakkawood, POM, Santoprene, G10 and stabilized wood are the common ones, and what each is like to hold is covered in knife handle materials.

Rivets.The pins holding the scales to the tang. Three is conventional on a Western knife. They should be perfectly flush — a rivet you can feel with your palm is a finishing failure and will annoy you every time you cook.

Butt. The rear end of the handle. Its shape decides whether the knife digs into your palm during long prep, which is the sort of thing you only discover after an hour of chopping.

Which parts actually matter

Most knife marketing draws attention to the parts that photograph well. Here is the honest ranking of what changes the way a knife performs.

The two rows at the top do nearly all the work, and neither of them is a headline feature on any packaging. A knife that is thin behind the edge and ground at an acute angle will out-cut a thicker knife made of better steel, every time — which is why our MAC review spends most of its length on grind rather than alloy, and why Damascus cladding sits at the bottom of the table.

What is the choil of a knife?

The small notch or unsharpened section where the cutting edge stops, just before the handle. It marks the safe place to rest a finger when choking up on the blade, and on Japanese knives it is often left as a smooth rounded corner rather than a notch. A sharp, unrounded choil is uncomfortable in a pinch grip.

Which parts of a knife actually affect cutting?

The bevel angle and how thin the blade is behind the edge do almost all of the work. Blade profile — how much belly there is — determines which cutting motion suits. Everything else, including the bolster, the rivets, the tang style and the finish, affects weight, balance, comfort and durability rather than how the knife goes through food.
