Wüsthof 9-Inch Honing Steel Review

The default rod in half the kitchens in America, and the one most often used wrong. What Wüsthof publishes about it, the sizing rule almost nobody applies, and the knives it should never touch.

Short version: this is the correct rod for a Western knife and the wrong rod for a Japanese one, and almost every complaint about it traces back to that single distinction. It is a forged steel rod made in Germany by the company that made the knives it is designed for, it costs a small fraction of what those knives cost, and used properly it will keep a German chef’s knife feeling keen for months between actual sharpenings. Used on a hard Japanese blade — or used as a substitute for sharpening, which is the far more common error — it does nothing useful and can do harm. Nine inches is the right length for the 8-inch chef’s knife most people own, and that is not a coincidence.

What Wüsthof actually publishes

Very little, and the little there is matters. The product page describes the rod as “premium forged steel engineered for lasting strength and corrosion resistance,” gives it a black ergonomic handle with an embossed Wüsthof logo, states that it is made in Germany, sells it under a limited lifetime warranty, and tells you to wipe it with a damp cloth and towel-dry it immediately. That is the entire published specification.

Note what is not there. There is no hardness figure for the rod. There is no weight. There is no description of the cut — how coarse or fine the longitudinal ridges are — which is the single specification that decides how aggressively a steel rod treats an edge. Every one of those renders Not published on the card below, and that is a finding rather than a gap in our research: this is a category where the surface texture is the product, and the maker does not describe it. If you want a rod whose abrasive grade is stated in microns, you are looking for a diamond or ceramic rod, not a steel one.

The one number Wüsthof does put on the page is about the knives rather than the rod: “Our sharpening angle for standard blades is 14° per side.” That is the geometry this rod exists to maintain, and it is a useful anchor. A Wüsthof Classic is not a 20° knife in the way the shorthand suggests — the maker grinds it thinner than that, which is one reason its edges respond well to routine honing rather than needing constant regrinding.

The rule most buyers skip: the rod must out-reach the blade

Wüsthof’s own how-to page states the sizing rule in one sentence: “You want to make sure the steel is at least as long as the blade you are either honing or sharpening.” It sounds obvious. It is routinely ignored, because rods are sold by price and by handle style rather than by fit.

Nine inches covers an 8-inch chef’s knife with an inch in hand, which is why this is the default rod for the default knife. It also covers a santoku, a nakiri, a utility knife and a paring knife comfortably. It does not comfortably cover a 10-inch chef’s knife or a long carving slicer — on those you run out of rod before you run out of blade, and the last inch or two of edge never gets honed, which is exactly the stretch nearest the tip that you use for detail work. If your longest blade is over nine inches, buy a longer rod; Wüsthof lists 10-, 11- and 12-inch options in the same catalog. The angle, and the stroke count

Wüsthof publishes both, in two places, and the figures are worth having because most rod instructions are vague to the point of uselessness. Its Chef’s Table guide gives “a 14.5-degree angle between the edge of the blade and the honing steel” for Western knives and “a 10-degree angle” for Asian ones. Its Australian how-to page rounds that to “a 14 degree angle between the knife and the steel.” The half-degree difference is noise; the instruction is shallow and consistent.

The stroke counts are more interesting because they are so much lower than what people actually do. The how-to page says “a fairly sharp knife may only need 2-3 repetitions, while a dull knife will need more.” The Chef’s Table guide says to run the blade from the heel to the tip and “repeat this process 6-8 times while alternating sides.” So: somewhere between two and eight passes per side, depending on how far the edge has rolled. Not twenty. Not the theatrical clattering you see in restaurant kitchens, which is showmanship layered over a motion that only needs to be gentle and correct.

Two things go wrong in practice: people use too many strokes, and people let the angle climb as they get faster. A steel rod held at 25° is not honing anything — it is rounding the shoulder of the bevel, which makes the knife feel worse each time, which makes people hone more, which makes it worse again.

Does it sharpen? No — and Wüsthof agrees

This is the claim the category is built on and the one most listings blur. Wüsthof draws the line itself: honing “realigns the microscopic teeth on the edge of the blade and prolongs your knife’s lifespan,” while sharpening “takes a small amount of steel off the blade, creating a new edge.” Two different operations, two different tools.

There is a nuance worth adding, because the tidy “honing removes no metal” version is not quite the whole story. As Wikipedia’s summary of the practice puts it, steel and ceramic rods “may have longitudinal ridges,” and even non-abrasive rods — “smooth ceramic or ribbed steel” — “are able to remove small amounts of metal via adhesive wear.” A ribbed steel rod is not inert. It takes a little, which is precisely why over-honing is a real way to wear a knife out rather than a harmless habit.

The practical test is the one we set out in how to test knife sharpness: if a knife comes back after a few passes on the rod and stays back for a week, the rod is doing its job. If it comes back and dies again in two days, the edge is worn rather than rolled, and no amount of steeling will fix it. The hardness rule: who should not buy it

A grooved steel rod works by bending a rolled apex back into line. That mechanism depends on the steel being willing to bend. Wüsthof publishes its own forged blades at “58 Rockwell,” with its non-forged knives running “between 55 and 57 Rockwell” — squarely in the range that rolls rather than chips, and rolls back rather than snapping.

A Japanese gyuto at 60–62 HRC behaves differently. It is harder, holds an edge far longer, and when that edge does fail it is more likely to micro-chip than to fold. Putting a ribbed steel rod against it is asking a brittle apex to do something it does not do. The reference summary of the practice says the same thing from the other direction: in East Asia, “harder knives are preferred, so there is little need for steeling intra-day, as the edge does not deform as much. Instead, the blade is honed as needed on a waterstone.” Hard knives do not need daily honing, and the maintenance they do need is abrasive rather than corrective.

If your drawer is mixed, the answer is not to compromise on one rod. It is to hone the German knives on a steel rod, leave the Japanese ones alone between stone sessions, or use a fine ceramic rod on them — which lightly abrades instead of bending. Make sure you are buying the rod you think you are

This is the least glamorous warning on the page and possibly the most useful. Wüsthof lists fourteen products in one collection under the heading “honing steels,” and more than one of them is a 9-inch honing steel at a different price — a Classic 9-inch and a 9-inch Triple Rivet among them. The catalog also contains lengths from 7 to 12 inches, a 9-inch fine diamond sharpening rod, a 9-inch diamond knife sharpener and a ceramic sharpening rod, all sitting in the same list.

Three of those are not honing steels at all in the sense this page means. A diamond rod is an abrasive: it removes metal and it will reprofile an edge if you lean on it. A ceramic rod is a mild abrasive and is the right tool for hard steel. A cut steel rod is neither. They are stocked together, named similarly, and photographed identically at thumbnail size, which is exactly how people end up taking a diamond rod to a knife they meant to gently realign. One more thing to check before you buy, and it is a genuine wrinkle rather than a gotcha. The product page states a limited lifetime warranty. Wüsthof’s warranty-details page lists among its exclusions “sharpening tools and honing steels, due to their abrasive nature.” We are not going to tell you which of those governs your purchase, because only Wüsthof can. We are going to tell you the two statements exist, because a review that quoted the first and skipped the second would be selling rather than reviewing.

Against a ceramic rod, the trade is compatibility. A fine ceramic rod does the same daily job on a wider range of knives and is the only one of the two we would put near a gyuto. The steel rod’s advantages are that it is cheaper, that it will not shatter if you drop it on a tile floor, and that on soft Western steel it is doing the mechanically correct thing rather than the merely acceptable one.

Against a whetstone, there is no trade at all, because they are not alternatives. A stone is what you use three or four times a year; a rod is what you use before dinner. Buying a rod instead of a stone is the classic mistake and the reason so many people believe their knives “won’t get sharp” — which we take apart in why your knife won’t get sharp. Own both. The rod is the cheaper half and it multiplies what the stone gives you.

Who should buy it

Buy it if you own Western knives — a Wüsthof, a Zwilling, a Victorinox, a Mercer, a Henckels — and your longest blade is nine inches or shorter. It is the rod the maker built for that steel, it is made in Germany, and it will pay for itself in the first month simply by making you stop cutting with a knife that has rolled over. Do not buy it if your knives are Japanese at 60 HRC or above — buy a fine ceramic rod. Do not buy it if your longest blade is a 10-inch chef’s knife or a carving slicer — size up. Do not buy it if what you actually want is for a dull knife to become sharp, because it will not do that and no rod will; that is a job for a beginner whetstone or, if you would rather not learn, a professional service. Is the Wüsthof 9-inch honing steel worth buying?

If your knives are Western — German, French or American, in the 55-58 HRC range — yes. It is the rod the maker of those knives designed for those knives, it is made in Germany under a limited lifetime warranty, and it takes ten seconds a session. If your knives are Japanese and run at 60 HRC or above, buy a fine ceramic rod instead. The steel rod is not the problem; the hardness mismatch is.

Does a honing steel sharpen a knife?

No, and Wüsthof says so itself. Honing 'realigns the microscopic teeth on the edge of the blade', while sharpening 'takes a small amount of steel off the blade, creating a new edge'. A rod restores the feel of an edge that has rolled over; it cannot restore an edge that has actually worn away. If a knife dulls again within a day or two of honing, it needs a stone, not another pass on the rod.

What angle should you hold a knife against a Wüsthof steel?

Wüsthof publishes two numbers. Its Chef's Table guide gives a 14.5-degree angle between the blade and the steel for Western knives and 10 degrees for Asian knives; its Australian how-to page rounds the Western figure to 14 degrees. Both are close enough that the practical instruction is the same — a shallow angle, roughly half of a 30-degree gap, held consistently for every stroke.

How many strokes on a honing steel?

Wüsthof's own numbers bracket it. Its how-to page says 'A fairly sharp knife may only need 2-3 repetitions, while a dull knife will need more'; its Chef's Table guide says to 'Repeat this process 6-8 times while alternating sides'. Fewer than most people do, in other words. Honing is not something you get better results from by doing more of.

The product page states a limited lifetime warranty, but Wüsthof's warranty-details page lists 'Sharpening tools and honing steels, due to their abrasive nature' among the exclusions.
