Why stones come first
A whetstone is the only sharpener on this page that has no opinion about your knife’s angle. You set it, the stone takes it. That matters more for a Japanese knife than for a German one, because the factory geometry is the point — you paid for a thin, acute edge on hard steel, and a stone is the only tool that reproduces exactly that edge rather than a compromise near it. The trade is that you have to hold the angle, and our how-to and angle guide exist to teach that.
Among stones, hard steel changes the ranking. The Shapton GlassStone 1000 is first because a hard ceramic layer bonded to glass stays flat far longer than a soft stone, and flatness is what keeps a 15° bevel a 15° bevel from heel to tip. It is splash-and-go, it cuts 60 HRC steel quickly, and it is expensive, single-grit, and needs a finisher alongside it. The King KW-65 is the opposite bargain: a soft, fast, forgiving 1000/6000 combination stone that has taught more people to sharpen than any other — and that dishes with use, so a flattening plate is part of the purchase. The Naniwa 1000/3000 sits between them: harder ceramic than the King, a practical two-grit pairing, and a 3000 finish that is plenty for a kitchen edge. Which grits you actually need is on the grit guide; for a VG10 gyuto the answer is 1000 to sharpen and anything from 3000 upward to finish.
The guided system that reaches 15°
If the stone has beaten you — and it beats a lot of people — a clamped guided system removes the variable you could not control. The Work Sharp Precision Adjust clamps the blade and sets the angle by knob from 15° to 30° in one-degree steps, with coarse diamond, fine diamond and a fine ceramic on one rotating handle. Set it to 15° or 16° and it will reproduce a Japanese factory edge more consistently than most hands will. The costs are that it is slower than a stone once you can use a stone, and the clamp can mark a soft handle or a bolster if overtightened. The full review covers both. The electrics: only the 15° machines
Electric sharpeners are the category with the most machines that should never meet a Japanese knife, and the two that should. The Chef’sChoice 15XV is built around a fixed 15° per side and diamond abrasives in its first two stages; EdgeCraft describes it as the machine that “upgrades traditional 20° factory edges into sharper 15° edges,” which for a Japanese knife simply means it sharpens at the angle the knife already has. The AngleSelect lets you choose 15° or 20°, which makes it the pick for a drawer that holds a gyuto and a Wüsthof; it is not in the table because the 15XV’s third polishing stage gives it the better finish, but it is the better buy for a mixed kitchen and the electric roundup explains when.
Two warnings apply to both machines and the registry cards repeat them. Motorized abrasion removes real steel every pass, which on a thin, hard, expensive blade matters more than on a thick German one — touch up rarely and lightly. The rod: fine ceramic, and only that
A grooved steel honing rod is the right tool for a 56–58 HRC German knife and the wrong tool for a 60 HRC Japanese one: the rod is not meaningfully harder than the blade, so instead of realigning the edge it chips it. Shun’s own FAQ tells owners not to use a diamond steel for regular honing either, because it removes metal before it is necessary. What works between stone sessions is a fine ceramic rod — the Messermeister is 1200 grit and 12 inches, long enough for a 240 mm blade — which lightly abrades a whisker of steel rather than bending it. What to keep away from a Japanese edge
- Pull-through sharpeners with a fixed slot. Carbide or ceramic V-slots set at a Western angle grind a blunt secondary bevel onto a 15° edge and tear the apex. They are in our systems roundup for soft knives; they are not here.
- Grooved steel rods. See above. A ceramic rod or nothing.
- Any electric without a 15° setting. Belt machines and two-slot electrics with fixed Western guides fall in this group.
- Coarse stones for routine sharpening. A 60 HRC edge rarely needs anything below 1000 unless it is chipped; a 220 or 400 stone on a routine touch-up throws away steel. Chips are their own job: how to fix a chipped knife.
How we ranked these
We do not own these sharpeners. Eligibility was the ability to hold a 15° per-side angle (a stone by nature, a system or electric by its published angle spec) and an abrasive that cuts hardened stainless at a sensible speed. Within the eligible set we ranked stones on hardness and flatness retention, systems on angle range and abrasives, electrics on angle and number of stages, and we noted where a maker publishes no micron figure for its abrasives.
