The Best Diamond Sharpening Stones

Plates that cut hard steel fast and never need flattening. Six compared on grit, surface type, size and what comes in the box.

A diamond plate is not a stone at all. It is industrial diamond grit electroplated onto a flat steel or aluminum substrate, and it behaves completely differently from the water stones most sharpening advice assumes. It needs no soaking. It cuts hard steel far faster than any waterstone of the same nominal grit. And — the reason serious sharpeners own at least one — it stays flat. Every water stone dishes as you use it, and a dished stone quietly sharpens a curve into your edge; a diamond plate does not dish, so it never develops that problem and it is the tool that fixes it on stones that have.

The catch is refinement. Diamond plates are excellent from repair grit up to about 1200, which covers everything a kitchen knife genuinely needs. Above that they thin out fast, so if you want a mirror-polished 6000-grit finish you will still want a finishing water stone or a strop after the diamond. They also cost more upfront and less over a lifetime, since there is nothing to wear away and re-flatten.

Grit numbers here need care, because makers count differently. DMT states its grades by color with both a mesh and a micron figure — Coarse is 325 mesh / 45 µm, Fine is 600 mesh / 25 µm, Extra-Fine is 1200 mesh / 9 µm. Where a maker publishes only a name (“Medium”) with no number, we say so on the card rather than converting a guess into a figure. How to choose a diamond plate

1. Interrupted or continuous surface

This is the choice nobody explains. DMT’s DuoSharp plates have a perforated, polka-dot surface: the holes give steel swarf somewhere to go, so the plate keeps cutting through a long session instead of loading up. The trade-off is that a very thin blade tip — a petty, the last centimeter of a gyuto — can drop into a hole and catch. A continuous surface (the Dia-Sharp, the SHARPAL, the Trend) never catches anything but loads faster. For a kitchen full of thin Japanese knives we would take continuous. For a garage full of chisels, interrupted.

2. Grit, and what a kitchen knife actually needs

Two grits cover 95% of kitchen work: something around 300–325 to reset a damaged or badly neglected edge, and something around 600–1200to sharpen it. Very coarse plates (the Atoma #140 here) are repair and lapping tools, not sharpening tools — using one on a good knife removes an alarming amount of metal for no benefit. 3. Size, and why 3 inches wide matters

An 8-inch plate is the practical minimum for kitchen knives; below that a 210 mm gyuto overhangs so far that keeping it square becomes a wrist exercise. Width matters more than people expect: a 3-inch-wide face lets you sweep the whole edge across without running off the side, while the narrower 2⅝-inch plates demand more precision. If you are new to freehand sharpening, buy the widest plate you can.

4. Whether a base is included

A diamond plate on a bare countertop will slide, and a sliding abrasive with a knife on it is the one genuinely dangerous thing in sharpening. Some plates ship with a non-slip base or a case that doubles as one (SHARPAL, Trend); DMT’s “NB” models explicitly do not — that is what the suffix means. If yours does not include one, a damp folded tea towel works perfectly well until you buy a mat.

Diamond versus water stones

These are not competing products so much as different philosophies, and plenty of people end up owning both.

Diamond wins on:speed on hard steel (a VG10 or powder-steel edge that a soft waterstone barely touches), zero maintenance, no soaking, no flattening, and durability — a plate is a decade-long purchase. It is also the only sensible way to sharpen a knife somewhere you cannot make a mess.

Water stones win on: the finish at high grit, feedback (a stone tells you what the edge is doing in a way a plate does not), cost of entry, and the fact that a slurry cuts more gently on soft German steel. Our whetstone roundup covers that side of the field.

The most common sensible setup is a coarse diamond plate for repair and flattening, plus a 1000/6000 water stone for everyday sharpening and finishing. That combination has no gaps.

The flattening job nobody mentions

If you already own water stones, a coarse diamond plate is the single most useful upgrade you can make — not to sharpen with, but to keep the stones flat. A 1000-grit stone dishes visibly within a few dozen sharpenings, and once it is hollow every stroke rounds your bevel a little more. Using one without ruining a good knife

Diamond cuts fast, which means mistakes also happen fast. Three rules:

Use almost no pressure.The instinct from water stones is to lean in. On diamond, the weight of the blade plus a fingertip is enough — pressing harder does not cut faster, it just tears the diamond off the plate and shortens its life.

Break a new plate in.A fresh diamond plate is aggressive for the first few uses as the proudest crystals wear down, then it settles into its long, stable working life. Do not judge it — or sharpen your best knife on it — in the first session.

Use it wet, even though you do not have to.Diamond plates work dry, but a splash of water floats the swarf away and keeps the surface cutting. It also stops steel dust getting everywhere. The angle and stroke are identical to stone technique — see the angle guide for holding 15° without a jig.

One job these plates are the outright best tool for sits outside the kitchen. The hard, wear-resistant steels in a folding pocket knife defeat soft water stones almost entirely, and a short blade dishes one quickly — diamond solves both at once. The angle is different too, so work through sharpening a pocket knife before you take a plate to a folder.

Frequently asked questions

Are diamond sharpening stones better than whetstones?

For speed on hard steel and for never needing maintenance, yes. A diamond plate cuts a 60 HRC Japanese edge far faster than a waterstone of the same nominal grit, needs no soaking and never dishes. Water stones still win on high-grit finish, on feedback, and on price of entry. Many sharpeners own a coarse diamond plate for repair and flattening plus a 1000/6000 water stone for everyday work.

What grit diamond stone do I need for kitchen knives?

Two: roughly 300-325 to reset a damaged or badly neglected edge, and 600-1200 to sharpen and refine it. A double-sided plate covers both in one purchase. Anything coarser than about 220 is a repair and stone-flattening tool rather than a knife sharpener — it removes far more metal than a kitchen knife should ever lose.

Do diamond stones need water or oil?

Neither is required — diamond plates work dry, which is their practical advantage. Using them with a splash of water is still worth doing: it floats the steel swarf clear so the surface keeps cutting, and it keeps metal dust off your counter. Never use oil on a diamond plate; it traps swarf in the surface.

Do diamond sharpening stones wear out?

Eventually, but slowly. A new plate is aggressive for its first few uses as the tallest diamond crystals break in, then settles into a long, stable working life measured in years of home use. Heavy pressure is what actually kills them — it tears diamond off the plating. Use the weight of the blade and a fingertip, no more.

Can you use a diamond stone to flatten a whetstone?

Yes, and it is the standard method. A coarse diamond plate — the Atoma #140 is the reference tool for this — takes the high spots off a dished water stone in about thirty seconds of circular strokes with water. Pencil a grid on the stone's face first; when the last of the grid disappears, the stone is flat again.

Will a diamond stone damage a Japanese knife?

Not if you use it properly. Diamond is harder than any knife steel, so it cuts a hard VG10 or powder-steel edge cleanly rather than glazing over the way a soft stone does. The risks are pressure (which removes more metal than you intended) and grit choice (a 140 or 220 plate on a good knife is vandalism). Stick to 600-1200 for routine sharpening and use almost no downforce.
