The three numbers that matter, and the one nobody prints
Blade length: 150–170 mm. This is the band every pick sits in. Below 150 mm you are into paring-knife territory and lose the ability to slice through a whole onion in one stroke; above 170 mm you are back to the length that caused the problem. The MAC santoku and the Miyabi bunka are 165 mm, the Kai nakiri is 165 mm, the Tojiro petty is 150 mm, the Shun utility is 152 mm and the Victorinox santoku is 170 mm.
Weight: published for two of the six.Tojiro publishes 80 g for the DP petty and KAI publishes 120 g for the Ginju nakiri. Those are the only two makers on this page who state a weight for the exact model, and it is why both are here: a claim of “lightweight” that nobody will put a number on is marketing. For the other four, the weight cell reads Not published, and you should treat any figure you see on a listing for them as unverified. As a reference point from elsewhere on this site, a forged 8-inch German chef’s knife runs around 250 g, and Shun publishes 215 g for its 6.5-inch nakiri — short does not automatically mean light, which is the whole reason we look for the number.
Grind: thin wins.A thin, taper-ground blade wedges less and needs less downward force. MAC’s reputation rests on grinding thinner than almost anyone, which is why a plain-looking MAC santoku is our overall pick over prettier knives at the same length. The Tojiro petty and the Miyabi bunka are ground thin behind the edge for the same reason; the Victorinox is a stamped blade that is thin by construction rather than by craft.
Handle girth: nobody publishes it.It is the number a smaller hand cares about most and it does not exist on any spec sheet we can cite. The usable proxies are shape and bolster. The Miyabi and Shun use a Japanese D-shaped handle, which is slimmer than a Western riveted grip; the MAC’s pakkawood Western handle is on the slim side of Western; the Victorinox’s Fibrox grip is the fattest here but is also textured, so it can be held more loosely. If you pinch-grip, a bolster you can rest a finger against (Tojiro, MAC, Miyabi) does more for control than any handle shape does.
Which shape for which cook
- You cut a bit of everything:the MAC or the Victorinox santoku. A 165–170 mm santoku is the shortest blade that still does the whole job of a chef’s knife, and the flat profile suits the up-and-down chop a smaller hand controls best. The differences between the two are on our santoku guide.
- You want the lightest knife that still slices an onion: the Tojiro petty. At 150 mm and a published 80 g it is a third the weight of a forged German chef’s knife, with a VG10 core at ~60 HRC. Our petty guide covers what it will and will not do as a main knife.

- You want one premium knife and a slim handle:the Miyabi Kaizen II bunka. FC61 at ~60 HRC, a 9.5–12° hand-honed edge and a D-handle, in 165 mm. It is a lot of money; the bunka guide explains what the shape adds over a santoku.
Two things to avoid
Do not buy a “6-inch chef’s knife” from a German-style line without checking the handle. Several makers shorten the blade and keep the full-size handle and the full-size bolster, which gives you a knife that is shorter but no lighter and no slimmer in the hand. If a maker publishes a weight for the short version and it is within a few percent of the 8-inch, that is what has happened.
Do not go below 150 mm for a main knife.A 120 mm paring knife is easier to hold, and it is the wrong tool for almost everything a chef’s knife does. The whole point of the band on this page is that it is the shortest length that still lets you cut through an onion, a chicken breast or a head of lettuce in one stroke.
How we ranked these
We do not own these knives. We ranked on published blade length, on published weight where it exists, on grind and construction as the maker describes it, and on handle shape as a proxy for the girth figure nobody prints. Where a maker publishes a hardness figure it is in the table; where it does not, the cell says so — MAC, KAI and Shun all leave it blank for the exact models here, which is worth knowing before you pay a premium price for one of them.
