Short version: almost everything that goes wrong in beginner sharpening is one problem wearing different hats. You cannot hold the same angle for forty strokes, so the bevel comes out rounded, so you never raise a proper burr, so the knife never gets sharp and you conclude that whetstones are hard. The Precision Adjust removes that variable mechanically: the blade clamps, a dial sets the angle anywhere from 15° to 30° in one-degree steps, and a guide rod holds it there whether or not your hands are steady. What is left is stroke count, which anyone can manage.
What the dial actually solves
Most guided systems before this one used fixed holes — four or five preset angles, and if your knife’s existing bevel fell between two of them, you had to pick one and grind the difference away. That is not a minor inconvenience: reprofiling a 17° edge to 20° means removing metal along the entire bevel, which on a good knife is both slow and wasteful.
A continuous dial fixes it. You can set 15° for a Japanese gyuto, 20° for a German chef’s knife, and anything in between to match an edge you did not create. That single feature is the reason we rank this above the older clamp systems, including the diamond Lansky, which remains a perfectly good tool with fixed guides at 17°, 20°, 25° and 30°.
The abrasives are a coarse diamond plate, a fine diamond plate and a fine ceramic, all mounted on one rotating handle so you change grit by turning it rather than swapping parts. Coarse diamond does the shaping, fine diamond does the sharpening, ceramic does the finishing — the same coarse-to-fine logic as a stone progression, explained in our grit guide.
Three things it does badly
1. It is slow, and it stays slow. A guided system does not get faster with practice the way freehand does. Each stroke covers a small section of the edge, so a 210 mm gyuto is a lot of strokes, and you will spend fifteen minutes on a knife that a competent stone user finishes in five. If your goal is to sharpen a drawer of eight knives in one sitting, budget an evening.
2. The clamp marks things. Overtighten it and you will leave impressions on a soft handle scale or a polished bolster. Nothing structural, but visible, and irritating on an expensive knife. Tape over the jaws or a folded paper towel solves it completely, and the fact that everyone has to discover this independently is a small design failure.
3. Long, tall and awkward blades fight the clamp.Blades much over about ten inches need repositioning halfway, and each reposition risks a slightly different presentation. Very tall blades — a Chinese cleaver, a big nakiri — sit awkwardly in the jaws. And a knife with a full bolster running to the heel has the same problem here as everywhere else: the steel shoulder keeps the last inch of edge off the abrasive.

Against a whetstone, the trade is skill for time. A stone gives a better edge, costs far less and removes almost nothing — but only after you have learned to hold an angle, which is a genuine barrier that plenty of people never get past. Against an electric machine, the trade is time for steel. An electric sharpener finishes a knife in a minute and takes a real bite of metal doing it; the Precision Adjust takes fifteen minutes and takes almost nothing. Who should buy it
Buy the Precision Adjust if you own knives worth maintaining, you have tried freehand sharpening and produced a knife that would not cut paper, and you would rather solve the problem with a jig than with practice. It is also the right answer for a household with mixed Japanese and German knives, because you can dial each one to its own geometry instead of forcing everything to a single angle.
Do not buy it if you already sharpen freehand competently — you will find it tedious. Do not buy it if you want speed above all, because it does not have any. And do not buy the Elite unless you are sharpening for a whole household regularly; the standard kit reaches the same edge on a kitchen knife, and the extra abrasives mostly earn their keep on damaged blades.
