Short version:the Tojiro DP 210 mm gyuto is the default recommendation for a first Japanese chef’s knife, and the specification sheet supports the reputation. You get a VG10 core at about 60 HRC— the same steel grade that sits inside knives costing two and three times as much — ground thin, finished at roughly 15° per side, and wrapped in a plain stainless jacket rather than an expensive Damascus one. Almost all of the money went into the part that cuts. It is not the most comfortable knife in its price range and it is not the prettiest, and if you are rough with knives it is the wrong purchase entirely.
What the specs mean in practice
Three numbers do most of the work here.
VG10, ~60 HRC. VG10 is a Japanese stainless with enough carbon and vanadium to be hardened well past what German cutlery steel manages. On the Rockwell C scale the DP sits around 60 — against roughly 56–58 for a Wüsthof or a Mercer. Those few points change the whole ownership experience: a harder edge holds its keenness through far more cutting before it rolls over, which is why a gyuto still slices tomato skin in week three while a soft knife needs a rod every other day.
Three-layer construction. The VG10 sits as a core between two layers of softer stainless. This is standard san-mai practice and it exists for a good reason: hard steel is brittle, so cladding it in something more ductile makes the blade as a whole tougher than a monosteel of the same hardness would be. The Damascus knives further up the price ladder are doing exactly the same thing, with more layers, patterned for looks.
210 mm, ~15° per side.210 mm is the Japanese standard for an all-purpose blade — the direct equivalent of an 8-inch Western chef’s knife, and the length we recommend to almost everyone. The 15° edge is more acute than the ~20° a German knife typically arrives at, and a more acute edge meets less resistance going into food. Combined with a thin grind, that is the whole explanation for why a gyuto “feels sharper” the first time you use one.
Three things it does badly
1. It is unforgiving.Hardness buys edge retention and pays for it in brittleness. Twist the blade to lever an avocado stone out, catch a chicken joint, or cut something still part-frozen, and a 60 HRC edge chips where a softer one would roll and recover. This is not a defect — it is the deal you make with hard steel — but it means the DP is a bad knife for a shared kitchen where other people grab whatever is nearest.
2. The handle is functional, not lovely.Tojiro fits the DP with a composite “eco-wood” Western handle: symmetrical, so left-handers are fine, and completely without charm. At this price that is the correct trade-off, but you notice it next to a pakkawood D-handle. Some users also find the exposed bolster area and the spine edges a little sharp out of the box — a couple of minutes with fine sandpaper on the spine is a common and easy fix.
3. It needs a stone, and a rod will not do.Whatever knife maintenance habit you currently have, if it involves a grooved steel rod, it does not transfer. A coarse rod on a 60 HRC edge is more likely to micro-chip the apex than straighten it. The DP wants a 1000/6000 whetstone every month or few, and a fine ceramic rod in between. If you are not going to do that, buy a softer knife and keep it keen instead — that genuinely cuts better than a neglected gyuto.

Against the Shun Classic, you are choosing between finish and value. The core steels are in the same class and the hardness figures are within a point of each other; the Shun adds Damascus cladding, a contoured D-handle and a more refined factory edge, and asks a substantial premium for them. If you want a knife you enjoy looking at, that is a real thing to buy. If you want the most cutting performance per dollar, the DP wins outright. Against the Wüsthof Classic, it is a genuine philosophical split rather than a value question. The Wüsthof is heavier, softer, tougher and maintainable with a ten-second rod; the Tojiro is lighter, harder, keener and needs a stone. Who should buy it
Buy the Tojiro DP if you cook regularly, you mostly cut vegetables, fish and boneless meat, you are willing to hand-wash and dry a knife, and you either own a whetstone or intend to. It is the least expensive way to find out whether hard Japanese steel suits you, and if it does, the DP is good enough that many people never feel the need to replace it.
Do not buy it if your kitchen is shared with people who put knives in the dishwasher, if you regularly cut through joints and bones, or if you know you will never sharpen anything. In those cases a forgiving soft-steel knife is not a downgrade — it is the correct tool.
