MAC Professional Santoku Review

The knife that keeps winning cutting comparisons against blades with harder steel and better spec sheets. Here is what MAC is actually doing differently.

Short version:the MAC Professional santoku is the answer to a question most knife marketing avoids — what if the thing that makes a knife feel sharp is not the steel at all? MAC does not publish a hardness figure and does not name a standard steel grade, which by this site’s usual standards should be disqualifying. It keeps winning anyway, because it is ground thinner behind the edge than nearly anything else at its price, and thinness is what you actually feel when a blade goes through a carrot. Buy it for how it cuts. Do not buy it if you need a spec sheet to justify the purchase.

The thing MAC does differently

Every knife has two separate properties that get muddled into the word “sharp”. The first is the apex— how fine the very cutting edge is, which is a function of steel hardness and how well it was sharpened. The second is the grind: how thick the blade is a few millimeters up from the edge, which is what has to be pushed apart for the food to separate. A knife with a perfect apex and a thick grind feels sharp for the first millimeter and then wedges. A knife with a merely good apex and a very thin grind glides.

MAC has built its whole reputation on the second one. The Professional line is ground unusually thin, and it stays thin further up the blade than its competitors do. That is why it repeatedly beats knives with better spec sheets in independent cutting comparisons, and why people who own one describe it as feeling sharper than knives that are, by any measurement of the apex, sharper.

The cost of that decision shows up in exactly the place you would expect: a thin blade is a weaker blade. There is less steel resisting a lateral force, so twisting this knife in a cut is a genuinely bad idea, and it is the wrong tool for splitting a squash or working around a joint.

The spec sheet gap, stated plainly

MAC publishes a description of its steel — a molybdenum-vanadium stainless of its own designation — rather than a standard grade, and for this model it publishes no HRC figure at all. On this site, an unstated hardness normally counts heavily against a knife, because it removes the basis on which we compare anything. It is worth noting that MAC doesstate a hardness elsewhere in its range — the Chef Series is published at around 59–61 HRC — so this is a gap in what the company chooses to publish per model rather than a company that never quotes numbers.

We are making a narrower allowance here rather than pretending the gap does not exist: MAC is an established Japanese maker whose reputation rests on repeat buyers, which is a different situation from an anonymous Amazon brand that will not name its steel because there is nothing to name. It is still a real limitation, and it is the single biggest reason to buy something else. What we can tell you from the published figures is that this is a 165 mm, taper-ground single-steel bladewith a dimpled face — and taper-ground is the whole story. Two things it does badly

1. It is fragile in the way thin knives are fragile.Not brittle — MAC’s steel is not so hard that it shatters — but thin. Lever an avocado stone with it, catch a chicken bone, or use it to break down a butternut squash and you will roll or chip the edge in a way a chunky German santoku would shrug off. This is a slicing and chopping knife, and nothing else.

2. The handle is functional and slightly dated. A simple riveted Western handle in a pakkawood-style composite. It is symmetrical, so left-handers are fine, and it is comfortable enough. It is also visibly a design from another era, and next to a contoured Shun D-handle or a molded Santoprene grip it feels plain. At this price that is a fair trade, but it is not a knife people buy for the way it looks.

How it compares

The MAC sits between two clearer propositions: the Tojiro DP, which gives you a stated hard steel for less money, and the Shun Classic, which gives you a stated hard steel plus a finish you can show people for considerably more.

Against the Tojiro DP santoku, this is thin-grind-versus-hard-steel in its purest form. The Tojiro will hold a keen edge through considerably more cutting, and you can verify that claim from a published number. The MAC will feel better every time you use it, and you cannot verify anything. Most people should buy the Tojiro; people who have used both usually keep the MAC.

Against the Shun Classic santoku, the MAC is the working knife and the Shun is the beautiful one. Shun’s Damascus cladding is cosmetic — the VG-MAX core does the cutting — and the D-handle either fits your hand or annoys you. Our santoku roundup puts all three side by side with live prices.

Who should buy it

Buy the MAC Professional santoku if you already know you like the santoku shape, you cut mostly vegetables and boneless proteins, you hand-wash your knives, and you care more about how a knife feels in use than about what its spec sheet says. It is the knife to buy when you have owned a decent santoku and want the next thing to be nicer to use rather than better on paper.

Do not buy it as a first Japanese knife — a thin blade and an unstated hardness is a lot of trust to extend on a first purchase, and the Tojiro DP exists for exactly that job. Do not buy it for a shared kitchen where somebody will eventually use it on a bone. And do not buy it if a missing hardness figure will bother you every time you look at it, because it will not appear later.

How we reviewed this

We do not own this knife and we have not cut with it. This review is a reading of what MAC and the retail listing publish — steel description, blade length, handle and construction — set against the published figures for the knives people cross-shop it with, plus the well-understood relationship between blade geometry and cutting resistance. Anything the maker does not state is marked Not published rather than guessed, which on this particular knife means the most important spec of all is blank. Our verdict

MAC Professional Series 6.5-inch Santoku (MSK-65)

The santoku that turns up in professional kitchens rather than gift guides. MAC grinds its molybdenum blades thinner than almost anyone, and the MSK-65 is light, fast and dimpled — a cutting tool with no decoration whatsoever.

Is the MAC Professional santoku worth it?

If cutting feel is what you care about, yes — it is ground thinner than anything else near its price, and thinness is what determines how a knife feels going through food. If you care about edge retention figures or want a hardness number to compare, it is a frustrating purchase: MAC does not publish an HRC for the Professional line, so you are buying the geometry, not the metallurgy.

What steel does MAC use?

MAC states a proprietary molybdenum-vanadium stainless rather than naming a standard grade such as VG10 or X50CrMoV15. That is a genuine limitation of this review: we can tell you what MAC publishes, and for this model MAC publishes a description rather than a hardness figure. Its Chef Series is stated at around 59-61 HRC, so the company clearly can quote a number when it wants to.

MAC Professional or Tojiro DP santoku?

Tojiro gives you a stated VG10 core at a stated ~60 HRC, which means longer edge retention and a spec you can verify. MAC gives you a thinner grind and a lighter knife, which means better cutting feel from the first cut. Buy the Tojiro if you want the edge to last; buy the MAC if you want the knife to feel good every time you pick it up.

Do the dimples on the MAC santoku do anything?

A little. The MSK-65 has a dimpled (granton) blade, and the scallops break the vacuum between a wet slice and the steel so potato, cucumber and cheese fall away instead of clinging. It is a genuine but modest effect. It does not make the knife sharper, and on a blade this thin the grind is doing far more for release than the dimples are.

How do you sharpen a MAC knife?

On a whetstone at roughly 15 degrees per side. MAC's grind is thin enough that it responds very quickly — fewer strokes than you expect, and it is easy to overdo it. A fine ceramic rod is fine between sharpenings; a coarse grooved steel rod is not, because a thin edge takes damage from one more easily than a thick German blade does.

Is a MAC knife dishwasher safe?

No, and MAC says so. Beyond the usual damage a dishwasher does to any knife — detergent etching, blades knocking against racks — this is a thin blade with a wooden-composite handle, and neither survives repeated heat and steam well. Hand wash, dry immediately, and it will last decades.
